Perfect for warm summer nights, this salad using grilled stone fruit is tasty, sweet and salty.
Grilled Stone Fruit Salad
Ingredients
  • 1 Sage Fruit® nectarine, halved
  • 2 plums, halved
  • 1 package spring mix
  • 2 cups strawberries, halved
  • 1 (15 oz.) can chickpeas, drained, rinsed
  • 1 cup crumbled feta cheese
  • 1/2 RealSweet® sweet onion, thinly sliced
  • 1 lemon, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon salt
Citrus Sorbet
Ingredients
  • 1 cup orange juice
  • 1 cup lemonade
  • 4 tablespoons whipped cream
Directions
Grilled Stone Fruit Salad
  1. Heat non-stick grill pan over medium heat; add nectarine and plums cut-side-down, and cook 5 minutes, or until grill marks are visible. Flip and grill 4 minutes, or until cooked through.
  2. Combine salad, strawberries, chickpeas, cheese and onion in large bowl.
  3. Whisk lemon juice, oil, mustard and salt in separate bowl. Pour over salad and toss. Top with grilled fruit.
Citrus Sorbet
  1. At least 2 hours before serving sorbet, combine orange juice and lemonade in 9x9-inch baking dish and freeze 15 minutes. Stir well and return to freezer.
  2. Continue freezing 90 minutes, stirring every 15 minutes until completely frozen. Top with whipped cream.
Suggested Sides
• 1 whole wheat dinner roll
