Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 1 medium bell peppers, diced
  • 2 (15 oz.) cans pumpkin puree
  • 2 (15 oz.) cans no-salt-added diced tomatoes
  • 2 cups low-sodium vegetable broth
  • 1 (15 oz.) can Great Northern Beans, drained, rinsed
  • 1 tablespoon maple syrup
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 1/2 teaspoon pepper
  • 4 ounces cream cheese
Directions
  1. Heat olive oil in skillet over medium heat. Add onions and peppers, and cook 4 minutes, or until translucent. 




  2. Add onions, peppers, pumpkin, tomatoes, broth, beans, maple syrup, chili powder, cumin, garlic, salt, pumpkin pie spice and pepper to slow cooker. 

  3. Cook 2-3 hours on high, or 7-8 hours on low. 


  4. Before serving, stir in cream cheese until melted.
