PB & Fruit Roll Up

Well most of us love a good ole classic like the peanut butter and jelly sandwich. But sometimes we just need to change things up to keep it interesting. My kids created a fun spin on the classic PB&J with this PB & Fruit Roll-Up. This wrap is tasty, tropical, and loaded with fruit. We try to pack more whole foods and fruits in the kids lunchbox and this recipe is just perfect! 

Nutrition Tip: Along with providing protein, peanut butter and peanut products contain bone-building magnesium and immunity-boosting Vitamin B6.

My kids love peanut butter and jelly sandwiches for lunch and as an after school snack. But we have been enjoying some different wraps and roll ups so we wanted to try something new and fun. Actually the kids came up with this one and customized their PB & Fruit Roll-Up with the fruits they liked. We love having the kids help in the kitchen! They seem to enjoy their meals and eat healthier when they have a hand in what they are making or packing in their lunchboxes. how to make PB & Fruit Roll Up with kids

Key Ingredients for this PB & Fruit Roll-Up

Whole Wheat Tortillas– we like whole wheat tortillas for our wraps. Whole wheat option provides more nutritional value than regular flour tortillas. But you can definitely use what you have at the house.

Peanut Butter– we chose peanut butter in this recipe but you can swap out for your favorite nut butter or alternative. Peanut Butter is a great source of protein and has healthy fats.

Strawberries these are one of the kids favorite fruits so we always have them at the house. Great as a snack or to sweeten many recipes, strawberries are super juicy and flavorful. They are also loaded with Vitamin C, a great source of fiber, and potassium.

Kiwi– loaded with Vitamin C and potassium, kiwi fruit is so tasty and just delivers the tropical flavor that we love to many recipes.

Banana– this family friendly fruit is not only tasty but great for you, too. Great for your digestive health, high in potassium, and can even help lower blood sugar levels. NOTE: Mixing the banana into the peanut butter will help the wrap stay fresh for school lunches.

How to make this PB & Fruit Roll-Up

First we start by mixing the banana, honey, and the peanut butter in to a small bowl. Then spread the mixture onto the whole wheat tortilla and layer with the kiwi and strawberries.

Next sprinkle with a little cinnamon. Then roll up the tortilla and slice into 1-inch think slices.

Enjoy as a snack or in your lunch box with all of your favorite sides.

  • 1 banana mashed
  • 2 teaspoons honey
  • 1/4 cup low-sodium peanut butter
  • 2 8-inch whole wheat tortillas
  • 1 kiwifruit thinly sliced
  • 4 strawberries thinly sliced
  • 1/4 teaspoon cinnamon

Instructions
 

  • Mix banana, honey and peanut butter in small bowl.
  • Spread onto tortilla and layer with kiwi and strawberries. Sprinkle with cinnamon.
  • Roll up tortilla, slice into 1-inch think slices and serve.
