Easy Guacamole Tomato Boats

Sometimes I just need something different for lunch. I am guilty of grabbing a salad or whatever is easy and eating it at my desk most days. It gets boring. The kids aren’t the only ones that get in lunchbox ruts. Us parents do too. So, one afternoon I was rummaging through the fridge to grab something for lunch and I decided I was going to try something different.

I grabbed the few tomatoes I had hanging around, some guac, homemade salsa we had leftover from taco night and some cheese and got creative. I stuffed the tomatoes with guacamole, salsa and cheese. I created Guacamole Tomato Boats. Guacamole stuffed tomatoes baked to perfection.

How To Make Tomato Boats

  1. Slice tomatoes in half and scoop out insides.
  2. Fill hollowed out tomatoes with desired ingredients.
  3. Heat in oven or broil if desired.

Could that be much easier?  I had lunch ready for myself in about 5 minutes. And it was good. Really good!

Using the guacamole gave my stuffed tomatoes a delicious Mexican flare. If you don’t have guacamole at home, but you have an avocado – simply make your own. Guacamole is easy to make!

  • 2 medium tomatoes on the vine
  • 1/2 cup guacamole
  • 1/2 cup salsa
  • 1/2 cup shredded lowfat Cheddar cheese

Instructions
 

  • Slice tomatoes in half and scoop out insides.
  • Fill tomatoes with guacamole, salsa and cheese.
  • Place under preheated broiler 5 inches from heat; broil 2 minutes, or until cheese melts.
