Ingredients
  • 2 (7-inch) whole wheat tortillas
  • 1/4 cup hummus
  • 4 large eggs, scrambled, cooked until firm
  • 1/4 cup crumbled feta cheese
  • 1/2 cup baby spinach, roughly chopped
  • 8 slices cucumber
  • 1 tomato, chopped
Directions
  1. Lay tortillas on flat surface and spread with hummus.
  2. Top with eggs, cheese, spinach, cucumber and tomato.
  3. Roll up and cut in half.
Suggested Sides
A glass of 100% juice 1/4 cup lowfat yogurt topped with pistachios, 1/4 cup pears and honey, to taste
