Easy Pumpkin Spice Pancakes

Ingredients
  • 1 cup canned pumpkin puree
  • 1 cup 1% milk
  • 1 large egg
  • 2 teaspoon vegetable oil
  • 1 teaspoon almond extract (or vanilla)
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
Directions
  1. Preheat griddle or pan to medium heat.
  2. Whisk pumpkin, milk, egg, oil and almond extract in large bowl. Add flour, baking soda, pumpkin pie spice and salt. Stir until incorporated but don’t over mix.
  3. Spoon about 1/3 cup of batter onto pan. Cook 2 minutes, or until edges are cooked and bubble begin to form on top. Flip and cook additional 2 minutes, or until cooked through.
