Cheesy Potato Bites

    These potato bites are perfect for weekend snack time or parties.
    Ingredients
    • 2 small Green Giant™ Fresh red potatoes, halved
    • 1 teaspoon olive oil
    • 1 small SUNSET® Campari® tomato, sliced
    • 4 ounces lean turkey breast
    • 1/4 cup shredded lowfat mozzarella cheese
    Directions
    1. Preheat oven to 400°F.
    2. Season potatoes with oil, salt and pepper. Place on parchment-lined baking sheet and bake 15-20 minutes, or until tender.
    3. Assemble potatoes by stacking tomato, turkey and cheese on top.
    4. Return to oven and bake 2 minutes, or until cheese melts.
    Suggested Sides
    1 Tbsp. caramel dip with ½ cup sliced apples
