Black Bean Street Tacos
Ingredients
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cumin
  • 2 (15 oz.) cans no-salt-added black beans, drained, rinsed
  • 1/4 cup water
  • 8 small corn tortillas, warmed
  • 1/2 cup plain Greek yogurt
Sweet & Spicy Cherry Salsa
Ingredients
  • 1 cup pitted Superfresh® dark sweet cherries, finely chopped
  • 1/2 yellow bell pepper, finely chopped
  • 1/2 jalapeño, finely chopped
  • 1/2 small red onion, finely chopped
  • 1//4 cup chopped cilantro
  • 1/4 cup chopped parsley
  • 1/2 lime, juiced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
Directions
Black Bean Street Tacos
  1. Heat oil in skillet over low heat. Add onion and cook 5 minutes. Add garlic, salt, pepper and cumin, stir and cook 3 minutes.
  2. Increase heat medium and add beans and water; stir and simmer until most of the liquid has evaporated.
  3. Top tortillas with black beans, Greek yogurt and Sweet + Spicy Cherry Salsa.
Sweet & Spicy Cherry Salsa
  1. Mix cherries, bell pepper, jalapeno, onion, cilantro, parsley, lime juice, salt and pepper in large bowl. Cover and refrigerate until ready to use.
