Today we’re excited to have California Strawberries guest blogging! The commission is responsible for conducting research to support California’s strawberry industry, including sustainable farming practices, production and nutrition research, food safety training and education, marketing and communications, trade relations and public policy.
With summertime just around the corner – and an abundance of fruits and veggies everywhere – it’s a great time to start thinking about how to treat family and friends to some of the season’s most healthful and colorful dishes and snacks.
In California, it’s the time of year when farmers up and down the ocean’s coast are harvesting ripe, juicy red strawberries for consumers across the country to enjoy, so it’s a perfect time to pick up a pound or two for the kids to snack on. After all, kids love strawberries and they are easy to pack up for a picnic lunch, a road trip, or a colorful surprise in a tall glass of lemonade or homemade popsicle.
The possibilities are endless, and the nutrition boost is real. Did you know that studies show eating eight strawberries a day (or even a few times a week) may improve heart health, help manage diabetes, support brain health, and reduce the risk of some cancers? And, they are low in sugar and packed with vitamin C!
Now that you know there are way more benefits than just good taste, here is a fun way to serve California strawberries to the kids – and don’t forget to save some for the adults too!
Strawberry Lime Popsicles
- 2 cups fresh or frozen strawberries
- 1 cup water
- 1 lime, juiced
- 1/4 cup sugar, optional
- 4 cups ice
- 1/2 cup strawberry slices, for garnish
1. Blend strawberries, water, lime juice, sugar and ice cubes in blender until smooth. Pour into 12 4oz. popsicle molds or cups. Add a few strawberry slices to each.
2. Freeze 4 hours, or until solid.
