Grilled Cantaloupe Salsa for Father’s Day

The start of summer brings so many fresh produce varieties to stores and farmer’s markets, including melon. Cantaloupe is one of the sweet varieties of melon that I love and pairs nicely with spicy, lemony flavors. At home, grilling season is our favorite time of the year. What a better way to celebrate dad on Father’s Day than organizing a parrillada (barbecue) and preparing a spicy cantaloupe salsa with chips to serve as an appetizer before the big meal.

Tuna Vizcaina for Easter Brunch

Easter is one of my favorite celebrations and every year I cook home-style favorites, like Tuna Vizcaina inspired by the traditional Spanish Style Cod, but using canned tuna for an easier and more economical way to feed a crowd.

Mexican-Style Pasta Soup for Kids

Pasta soups are a classic dish and a tradition at the Mexican family table. My mom used to make this Mexican-style pasta soup with vegetables for us, and would normally use pasta shapes like stars and letters. Inspired by those childhood favorites from my mother’s table, I decided to prepare this Mexican-style pasta soup for kids but that will also be enjoyed by those that are kids at heart.

Yuca Salad for Christmas

We latinos love to celebrate eating traditional foods like this boiled yuca salad for Christmas. Yuca is a root also known as cassava. This root is very common in the Cuban cuisine and it is prepared in many several ways. Yuca is used as an alternative to potatoes and it is a great complement to a turkey meal or for serving with pork.

Caribbean Style Turkey “Pavochón” for Thanksgiving

Being part of a Cuban family has added a new set of flavors and spices to my style of cooking. And making Caribbean Style Turkey “Pavochón” for Thanksgiving has become a tradition in our home. This turkey is a perfect example how we us Latinos embrace a true American tradition like Thanksgiving but infuse our culture and flavors to make it our own.

Pumpkin Empanadas for Día de Muertos

Pumpkin is a fall staple and an ingredient that is easy to find at any supermarket. That is why I am suggesting to make Pumpkin Empanadas. A perfect treat to celebrate Day of the Dead or Día de Muertos. This celebration dates from centuries ago and is a Mexican tradition. In my Mexican culture, the same way we celebrate life we also celebrate death. Because we believe there is still life after death, our beloved ones that have left deserve to be remembered and celebrated.

Mexican Corn Cups or “Esquites” for Hispanic Heritage Month

The Mexican Corn Cups or “Esquites” is a Mexican treat I grew up with and a recipe that I want to share since Hispanic Heritage month celebrations start today, September 15. Preparing Mexican corn cups could be a nice treat to offer if you are planning a Latino heritage party at home or if celebrating Mexico’s independence, as both are celebrated in the same day.
