This Fun Bento Fun-Due is perfect for the kids (or even adults) who like to dip and snack versus a heavy meal.

Packing a healthy lunch doesn’t have to be a daunting task. We have been trying out new and fun lunch time ideas like Banana Sushi Rolls and even Sandwich Kabobs to keep it interesting. Sometimes we give the kids a list of options for lunch for the week. This helps get them involved in the decision making and they can help make their lunches, too. Our kids liked these Fun Bento Fun-Due boxes because they love to dip their foods into their favorite sauces! So go ahead and pick some of their favorite fruits, veggies, and sauces to make these bento boxes. We made a sunflower seed yogurt dip in this recipe for a nut-free alternative, but go ahead and use what you have!

Key Ingredients in these Fun Bento Fun-Due Boxes

Strawberries– My kids love strawberries because they think they are getting a treat! They are our favorite berry and loaded with essential minerals, vitamins, and fiber.

Bananas As a great source of potassium, bananas are another favorite here in our house. We always have them so we sliced them up and added them to our boxes. Great for your digestive track, rich in minerals, and can help moderate blood sugar levels!

Apples– As one of our favorite snacks, apples are a great source of Vitamin C, fiber, and full of great antioxidants.

Broccoli– this green power food is great for your heart, can help reduce constipation, and supports healthy brain function. Broccoli is great in this fun- due recipe because they are great to dip cold.

Sweet peppers– We love our sweet peppers in our house and try to incorporate them as often as possible in our meals. The kids love the crunch and taste and I love knowing they are getting Vitamins A & C along with many other benefits!

Turkey– as a lean protein, turkey is a great choice for the kid’s lunchbox. Versatile, easy to roll up, and the kids love it.

Nutrition Tip: Sunflower seed butter is a delicious peanut or nut butter alternative and has twice the amount of fiber than traditional peanut butter spreads.

How to assemble these Fun Bento Fun-Due Boxes

First start by making the sunflower seed dip by mixing the yogurt, sunflower seed butter, agave and cinnamon in small bowl. Stir until well combined and set aside.

Next slice up all of your fruits and vegetables.

Then we sliced the turkey and rolled it up and placed it on a skewer with the cheddar cheese.

Then add all of the components to the bento box with the sunflower seed dip and the ranch dip.

  • 1/2 cup lowfat Greek yogurt
  • 2 teaspoons sunflower seed butter
  • 2 teaspoons agave nectar
  • 1/4 teaspoon ground cinnamon
  • 1/2 apple sliced
  • 1/2 banana sliced
  • 4 strawberries sliced
  • 2 tablespoons salsa Ranch dressing
  • 2 mini sweet peppers cut in half
  • 4 broccoli florets
  • 2 slices low-sodium turkey rolled
  • 1 slice lowfat Cheddar cheese

Instructions
 

  • Mix yogurt, sunflower seed butter, agave and cinnamon in small bowl. Stir until well combined.
  • Assemble remaining ingredients into bento box.
