If you have never tried or even heard of zoodles, you are missing out! Zoodles are vegetable noodles that are made my spiralizing zucchini to look like noodles. They are a great way to add extra nutrition into your family’s meal and they are mild in flavor so very easy to add or sub into recipes that call for pasta. You can eat the zoodles cold like we do in this recipe or you can warm them up in a sauté pan with you favorite sauce or even some olive oil.

Cherry Tomatoes– We love cherry tomatoes in our house because they are snack size, easy to incorporate into many dishes, and are loaded with great benefits! Tomatoes can help reduce inflammation in the body along with fighting against certain cancers!

Mozzarella Cheese– This creamy flavorful cheese is a family favorite in our home. This cheese is a great source of calcium, protein ,can build and repair muscles, and is rich in many B Vitamins!

How to make this Caprese Zoodle Salad

Step 1: Make the dressing

First get out a small bowl and combine the oil, balsamic vinegar, and honey. Whisk until well combined.

Step 2: Make the zoodles

Then use your favorite spiralizer to turn your zucchini into zoodles.

Step 3: Combine ingredients

In a large bowl, combine the zoodles, mozzarella cheese, cherry tomatoes, and basil. Then pour the dressing over the salad and mix until everything is tossed well.

Then add the caprese zoodle salad into your lunchbox with all of your favorite sides, fruits, or extra vegetables!

What if I don’t have a spiralizer?

  • 1 1/2 tablespoons balsamic vinegar
  • 1 teaspoon honey
  • 2 medium zucchini
