Salsa Chicken with Black Bean Quinoa

Serves: 4

A quick and easy dinner with less than 10 ingredients. Orange juice adds flavor and moisture to this salsa chicken recipe. Liven up quinoa by added just a few simple ingredients.

Salsa Chicken

Ingredients

  1. 1 pound chicken tenderloins
  2. 1/2 cup orange juice
  3. 1 lime, zested, juiced, divided
  4. 1/2 cup salsa

Directions

  1. Combine chicken, orange juice, ½ lime juice and salsa in large sealable bag, mix well. Marinate in refrigerator for 30 minutes to 1 hour.
  2. Preheat oven to 375 F.
  3. Empty contents of bag into 13x9 baking dish, coating chicken evenly. Place in oven and bake 20-30 minutes, or until cooked through.
  4. Remove from oven, discard remaining marinade. Sprinkle with lime juice. Top with additional salsa if desired.

Black Bean Quinoa

Ingredients

  1. 1 cup quinoa, rinsed
  2. 1 can (15 oz.) low-sodium black beans, rinsed, drained
  3. 1 cup cherry tomatoes, halved
  4. 1/4 cup cilantro, chopped
  5. 3 scallions, chopped

Directions

  1. Combine 2 cups water, remaining lime juice and quinoa in large saucepan and bring to a boil. Cover, reduce heat to low and simmer for 15 minutes or until liquid has evaporated. Add black beans, tomatoes, cilantro, scallions, 1/2 tsp. lime zest and fluff with fork. Heat through.
  2. Serve chicken on top of quinoa.
