One-Pot Healthy Turkey Skillet

  1. 1 tablespoon extra virgin olive oil
  2. 1 pound ground turkey
  3. 1 medium green bell pepper
  4. 1 medium sweet onion
  5. 3 Roma tomatoes
  6. 8 ounces whole wheat elbow macaroni, cooked according to package directions
  7. 1 can (15.5 oz.) kidney beans, rinsed, drained
  8. 2 teaspoons cumin
  9. 2 tablespoons chili powder
  10. 1/4 teaspoon salt


  1. Heat oil in nonstick skillet over medium-high heat: add turkey and cook 10 minutes or until no longer pink.
  2. Add bell pepper, onion and tomatoes to food processor and pulse until chunky.
  3. Add veggie mixture, noodles, beans, cumin, chili powder and salt to skillet and let simmer for 15 minutes.
