There’s more to making the perfect roasted potatoes than just throwing some spuds in the oven. Here are a few tips to help you make dill and garlic roasted potatoes that are crispy on the outside and fluffy on the inside.

1. Cut your potatoes into even-sized pieces or use petit potatoes like we did so they cook evenly.

2. Use an oven thermometer to ensure your oven gets to the right heat.

3. After you drizzle olive oil over the potatoes and add your seasonings, really take the time to toss them with their ingredients to ensure all of the potatoes are coated evenly with that delicious goodness!

4. Place the potatoes on a baking sheet lined with parchment paper for easier clean up

5. Halfway through cooking, you can flip the potatoes if you would like to ensure you get even cooking on the top and bottom. If you want an extra punch of flavor, you could add additional minced garlic to the pan as well – but be careful not to add too much.

We chose petite yellow potatoes because they are the perfect size for roasting without requiring us to pull out the knife and cutting board! Easier is better in our book.

The type of potato is also important. Russet or Yukon Gold potatoes are typically used for roasting, but red potatoes can also work well. Avoid using waxy varieties like new potatoes, as they won’t get as crispy when roasted.

Ingredients
  

  • 1 pound petite yellow potatoes
  • 1 tablespoon olive oil
  • 3 cloves garlic minced
  • 1 teaspoon dill
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions
 

  • Preheat oven to 400°F. Cover baking sheet with aluminum foil and spray with cooking spray.
  • Toss potatoes in oil, garlic, dill, salt and pepper. Lay single layer on prepared baking sheet.
  • Bake 20-25 minutes, or until browned and tender.
