Avocado Tuna Salad Sandwich

This tuna salad sandwich gets an extra nutritional boost from the traditional tuna salad with Hass avocados and lowfat dressing.

Avocado Tuna Salad Sandwich

Ingredients

  1. 1 can (6 oz.) tuna, drained
  2. 1/4 cup balsamic dressing
  3. 1/4 cup carrots
  4. 1 green onion, thinly sliced
  5. 2 tablespoons walnuts, chopped
  6. 1/2 avocado, sliced
  7. 4 slices whole wheat bread

Directions

  1. Mix tuna, dressing, carrot, onion, walnuts and avocado in mixing bowl.
  2. Toast bread, portion mixture into 2 servings and assemble sandwiches.

Suggested Sides

½ cup cottage cheese
½ cup roasted red potatoes

Ingredients

  1. 4 cups salad blend, chopped
  2. 1/2 mango, sliced
  3. 1/2 peach, sliced
  4. 1/2 avocado, sliced
  5. 1 tablespoon olive oil

Directions

  1. Toss lettuce with mango, peach, avocado and olive oil.
