A-B-C Dip

Avocados, black beans and cilantro make this dip recipe extra-tasty and extra-fun. Lime and tomato juices will help keep the avocados from browning if there’s leftover dip.

Ingredients

  1. 4 avocados, sliced
  2. 1/4 cup onion, finely chopped
  3. 1 clove garlic, minced
  4. 3 tablespoons lime juice
  5. 1/2 cup tomatoes, chopped
  6. 1 can black beans, drained, rinsed
  7. 2 tablespoons cilantro, chopped

Directions

  1. Mash avocados, onion, garlic and lime juice in large bowl until slightly lumpy.
  2. Stir in tomatoes, beans, cilantro and salt, to taste. Serve with assorted fresh cut-up veggies such as grape tomatoes, pea pods, baby carrots, cauliflower florets and fresh sweet pepper strips.

Suggested Sides

Sandwich with 2 slices whole wheat bread, 1 oz. lean deli meat and 1 oz. sliced cheese
½ cup cherries
A glass of water
