
Zesty Pasta Salad with Avocado and Tomato
Preparation Time: 25 minutes
Makes 6 (1 cup) servings
- 3 cups pasta shells
- 1/4 cup bottled fat-free Italian dressing
- 1/4 cup chopped fresh basil
- 2 cloves garlic, minced
- 1 cup halved grape tomatoes
- 1/2 ripe avocado, diced
- 1/2 cup finely chopped mushrooms
- 1/4 cup finely chopped Vidalia® onion
- 1/4 tsp. freshly ground pepper
- 1/8 tsp. salt
Cook pasta in large saucepan 8 minutes or until just tender. Drain; rinse briefly under cold water.
Combine dressing, basil, and garlic in small bowl.
Place pasta in large bowl; add tomato, avocado, mushrooms, and onion in large bowl. Add dressing; toss until evenly coated. Season with pepper and salt.
