Cheese-Dipped Veggies

Steamed Fresh Veggies with Light Hollandaise Sauce

Preparation Time: 10 minutes
Cooking Time: 25 minutes
Serves: 8 (1 Tbsp. sauce per serving)

  • 2 red potatoes, quartered
  • 1 (12 oz.) pkg. mixed vegetables (broccoli, carrots, cauliflower)
  • 1 cup chopped RealSweet® Vidalia® onion
  • 1/4 cup light mayonnaise
  • 1/4 cup plain nonfat yogurt
  • 1/2 tsp. yellow mustard
  • 1/2 tsp. lemon juice

Directions:

  1. Place potatoes on steamer rack over boiling water; steam, covered, 15 minutes or until just tender. Add mixed vegetables and onion to rack; steam 5 minutes or until all vegetables are tender.  Remove from heat; cover.
  2. Mix mayonnaise, yogurt, mustard and lemon juice in saucepan.  Cook on low heat 5 minutes or until heated through; stirring constantly.  Serve immediately over steamed vegetables.
