Smashed Turkey Sandwich

You will need:

  • 1 slice 100% whole wheat bread
  • 1 Tbsp. Light Ranch dressing
  • 2 slices oven-roasted deli turkey breast
  • 1/4 cup spinach leaves or packaged lettuce
  • 1 thin slice tomato
  • 2 thin slices avocado
  1. Place bread slice on cutting board; cut off all four crusts. Using a rolling pin, gently flatten out the bread to form a long rectangle.
  2. Spread dressing over the bread; top with turkey slice and lettuce. Lay tomato slice and avocado slices at one end of bread.
  3. Starting at the tomato end, roll the sandwich up and pat gently to secure. Serve whole or slice into pinwheels.

Preparation Time: 15 minutes
Serves: 1
Serving Suggestion: Serve with Carrot Sticks with Dressing.
