
Smashed Turkey Sandwich
You will need:
- 1 slice 100% whole wheat bread
- 1 Tbsp. Light Ranch dressing
- 2 slices oven-roasted deli turkey breast
- 1/4 cup spinach leaves or packaged lettuce
- 1 thin slice tomato
- 2 thin slices avocado
- Place bread slice on cutting board; cut off all four crusts. Using a rolling pin, gently flatten out the bread to form a long rectangle.
- Spread dressing over the bread; top with turkey slice and lettuce. Lay tomato slice and avocado slices at one end of bread.
- Starting at the tomato end, roll the sandwich up and pat gently to secure. Serve whole or slice into pinwheels.
Preparation Time: 15 minutes
Serves: 1
Serving Suggestion: Serve with Carrot Sticks with Dressing.
