Crunchy Parmesan Oven Fries

Baked instead of fried, they’re just as crunchy and just as delicious. Kids love to help dip the potatoes into the egg and cornflake mixture, which means lots of fun for them, and less work for you.

Preparation Time: 10 minutes                                       
Cooking Time: 30 minutes
Serves: 4

  • 1 egg
  • 3/4 cup cornflake crumbs
  • 6 Tbsp. grated Parmesan cheese
  • 1-1/2 tsp. Italian seasoning
  • 1-1/3 lbs. golden potatoes, cut into 1/2-inch thick wedges
  • Ketchup (optional)     

Directions:

  1. Coat two baking sheets with nonstick cooking spray.
  2. Lightly beat egg in small bowl.  Mix cornflake crumbs, cheese, and seasoning in another small bowl.  Dip potato wedges into egg; coat completely with crumb mixture.  Arrange in single layer on baking sheets.
  3. Bake 20 minutes in preheated 375°F oven; turn potatoes over and bake 10 minutes longer, or until potatoes are browned and crisp and insides are tender when tested with toothpick.  Serve immediately with ketchup, if desired.
