
Cheesy Veggies
Preparation Time: 30 minutes
Serves: 6 (1 cup veggies, 2 Tbsp. sauce)
- 6 medium unpeeled red potatoes
- 4 cups broccoli/cauliflower mix
- 1-1/2 Tbsp. all-purpose flour
- 2/3 cup 1% low-fat milk
- 1/2 cup shredded extra-sharp Cheddar or Swiss cheese
- 1/8 tsp. salt
- 1/8 tsp. pepper (optional)
Place potatoes on steamer rack over boiling water; steam, covered, 15 minutes or until just tender. Add broccoli/cauliflower to rack; steam 5 minutes or until all vegetables are tender. Remove from heat; cover.
Place flour in medium, heavy saucepan; gradually add milk, stirring with a whisk until fully blended. Place over medium heat; cook 6 minutes or until thick, stirring constantly with spoon. Remove from heat; add cheese and stir until melted. Makes 3/4 cup sauce.
Drizzle cheese sauce over mixture of broccoli, cauliflower, and potatoes.
