PB Fruit Roll-up

For a complete meal serve PB Fruit Roll-up with:
  • ½ cup carrots and celery sticks with 2 Tbsp. salsa
  • A glass of 100% fruit juice

Serve: 2
Preparation Time: 10 minutes
Ingredients:
  • 1 banana, mashed
  • 2 tsp. honey 
  • ¼ cup low sodium peanut butter
  • 2 (8-inch) whole wheat tortillas
  • 1 kiwi, thinly sliced
  • 4 medium strawberries, thinly sliced
  • ¼ tsp. cinnamon
Directions:

Mix together banana, honey and peanut butter. Spread mixture onto tortilla leaving a 1-inch perimeter uncovered by mixture. Layer strawberries onto mixture and then kiwi. Sprinkle cinnamon on top of kiwi.

Begin to roll tortilla away from you. Mixture will ooze out sides as you roll. When you come to the end, use the mixture oozing out of the end to help seal tortilla. Wipe away excess. Slice off ends to make tortilla roll even. Slice into even number of mini rolls and serve.
