Fruity Pitootie Smoothie & Mozzarella Avocado Omelet
For a complete meal serve Fruity Pitootie Smoothie with:
- Mozzarella Avocado Omelet
- 1 slice of whole-wheat toast

Serves 2
Preparation Time: 10 minutes
Ingredients:
- ¼ cup fresh pineapple, outer skin removed, core removed cut into ½” cubes
- ¼ cup fresh orange, peeled
- ¼ cup fresh mango, peeled, pit removed, cut into ½” cubes
- ½ banana, peeled (frozen, optional)
- 1 cup lowfat vanilla yogurt
- ½ cup ice
Directions:
1. Peel banana, cut into bite-sized pieces, place on cookie sheet and freeze over night.
2. Add pineapple, orange, mango, banana, yogurt, and ice to blender.
3. Blend until smooth.
Serves 1
Preparation Time: 5 minutes
Ingredients:
- 1-2 eggs
- ¾ oz. sliced Mozzarella cheese
- ¼ avocado
- 1 tsp. unsalted butter
Directions:
1. Beat 1-2 eggs until completely mixed. Season with salt and pepper, if desired.
2. Have 1 slice of mozzarella and ¼ avocado prepared, set aside.
3. Melt 1 tsp. unsalted butter over medium-high heat in non-stick skillet.
4. When butter stops foaming, add egg mixture, allowing eggs to set on the bottom.
5. As eggs set, take a rubber spatula and push the edges of the egg mixture in, allowing uncooked eggs on top to flow underneath and make contact with the skillet. Repeat procedure as needed.
6. When eggs are set but shiny, add avocado and mozzarella. Remove omelet from heat. The process should take 2-3 minutes.
7. Fold in half and slide onto warm plate.
