Apple & Pear French Toast & Breakfast Sausage
For a complete meal serve Apple & Pear French Toast with:

Serves 4
Preparation Time: 30 Minutes
Ingredients:
Apple & Pear French Toast
- 1 tsp. vegetable oil
- 2 large eggs
- ½ tsp. (plus 1 tsp) ground cinnamon, divided
- ¾ cup 1% milk
- ½ tsp vanilla extract
- 4 slices whole wheat bread
- 1 Tbsp. unsalted butter
- 1 apple, peeled, cored, diced
- 1 pear, cored, diced
- 1 Tbsp. honey
Breakfast Sausage
- 1 1/4 lean ground pork
- 2 cloves garlic, minced

1¼ tsp. dried sage

1¼ tsp. dried thyme
- 1 tsp. ground fennel seed
- ½ tsp. black pepper
- 1 tsp. salt
- 1 tsp. oil
Directions:
Apple & Pear French Toast
1. Whisk together eggs, cinnamon, milk, and vanilla until blended. Lightly coat large nonstick skillet with oil and heat over medium heat.
2. Dip bread into egg mixture for 10 seconds on each side; place in skillet. Cook each side 2 - 3 minutes or until browned.
3. Cook apples and pears with butter, cinnamon and honey for 10 minutes or until tender and glossy. Top French toast with apples and pears.
Breakfast Sausage
1. Place meat in a large mixing bowl; add garlic, sage, thyme, fennel, pepper and salt. Mix thoroughly until well incorporated. Form into small patties.
2. Heat oil in large skillet over medium-high heat, and cook patties 3-5 minutes, per side, or until internal meat temperature reaches 160°F.
