Today marks the first day of school for us in Orange county, FL, and it’s my youngest’s first day of kindergarten. Don’t worry, I was a tough mom and held back the tears until she boarded the bus. Many of us parents have sent our little ones off to their first day of school this year, and the rest of us will over the next few weeks, and sighed relief at not having to come up with one more summer activity or camp to keep our kids busy. Now comes the fun part of nightly homework, busy schedules and lunch-packing duties.

During the summer, ice cream is a staple in our house. Honestly it's a staple all year round, but we eat a lot of ice cream during the summer especially. It's the perfect dessert after any meal, and it's just enough to satisfy my sweet tooth. Even though my family has dessert each night, I do try to make it somewhat healthy. We all have cravings now and then, but I definitely don't want us to get too much sugar. These Individual Banana Split Sundaes are a great way for the kids to have a well-balanced sweet treat. The secret is to load up on the fruit!

You’ll save money when you shop in bulk or catch sales too! Check out a few of my favorite fruits and vegetables that I always have on hand to help with meal prep.
My two energetic and sports-enthusiastic boys cannot wait for the Rio games to start! Over the next few weeks, I’m going to take advantage of the coverage of these amazing athletes to continue to hit this point home. We’ll also be snacking on some of these fun, healthy snacks as we cheer on U.S.A!
